Happy Fourth of July, Everyone! Break out your finest red, white, and blue ingredients and bring something amazing to your Fourth of July Party.
You're not brining just any fruit salad, this Anthocyanin Rich Berry Quinoa Salad is the perfect summer dish to share.
Ingredients:
Strawberries, Goji berries
Quinoa, Applesauce (I used unsweetened), & toasted Walnuts
Blueberries
This is meant to be a really easy recipe, something to not stress over making last-minute for that party you're invited too., so measurements are estimates.
1 pound of strawberries
1/4 cup dried goji berries
1 pound blueberries
2ish cups cooked quinoa
1/4 cup applesauce
1/4 cup toasted walnuts
pinch of salt
Optional: technically, everything ingredient is optional, but originally I created the recipe with just the above ingredients. I added kefir later. Do as you wish :)


Assemble:
Ahead of time: cook quinoa let it cool, toast walnuts, chop berries.
When you're ready, put in a large bowl: quinoa, applesauce & mix. Then add the berries, walnuts. Fold all of this antioxidant rich goodness in the bowl. Chill until ready to serve.

Benefits of the recipe:
Variety: This is a truly nourishing bowl of healthy fats, carbohydrates, & protein.
Flavor: Just sweet enough for someone expecting a bowl of fruit. The salt really wakes up the sweetness of the berries.
Easy: These are pantry items for me (expect the goji berries, those were left over from Moroccan Stuffed Peppers).
Filling: The fat, protein, & fiber of the meal tells the body to slow down the digestion process. You will feel fuller and for longer amount of time than if you ate just a bowl of fruit salad without the quinoa and nuts.
