Spicy Peanut Chicken & Veggie Packet

Stir, chop, mix, pour, cook.

That's all this recipe requires so you're ~one hour away from a filling meal that serves 4 healthy portions.

Sometimes I like to think of my meals in terms of protein, veggies, carbs, & fats. Macros are trendy (and so is eliminating one of them). Keeping them all in your diet (and including some grains, fruits, & dairy in your "carbs" mix) gives you an ideal plate set up.

I like this recipe because it's a one of those throw-it-together, cook-it, eat-it meals. You technically don't even need to put it on a plate, although I recommend you do.

Yes, there's some chopping involved & mixing ingredients. All easy tasks, and cooking it is just a matter of putting the ingredients in individual packets (I used aluminum foil) and placing them onto a baking sheet and into a 450'F* oven.

Ingredients:

Mix all of this in a bowl:

1/4 cup of creamy peanut butter

1/4 cup of unsweetened almond milk

2 Tbsp. red wine vinegar

1 Tbsp. lime juice

1 Tbsp. of fresh minced garlic

1/2 tsp red pepper flakes

Chop all of these on a cutting board (after you give them a quick rinse)

12 oz green beans, fresh

2 sweet potatoes, peeled and diced into 1/2 inch chunks

1 red onion, sliced into 1/4 inch slices

1 pound of boneless skinless chicken breast, cut into 1 inch pieces

At this point you should have your Spicy Peanut portion of the recipe ready, and the Chicken Sweet Potato Green bean part also done. Now you just assemble and cook.

Assemble:

Preheat oven to 450'F

*Too hot outside? Icks-nay the whole packet thing and throw this all in a crock pot, 4 hours on high should suffice. Disclaimer I've never tried it personally. If you do, share your success :) !

Cut 4 large sheets (12 x 16) pieces of foil and mist with cooking spray.

Divide chicken, potatoes, onions, and green beans evenly into the center of each piece of foil. Pour the peanut butter mixture over the ingredients.

Bring together the edges of the foil so create the packet. Place them on a baking or cookie sheet in the oven. Bake for 25-30 minutes.

When done remove form oven, make sure the temperature of the chicken reads 165'F.

Transfer onto a plate and dinner is served.
